Would someone mind telling me what the difference between regular and "sim" is ? Sorry for the obvious telltale noob signs. Not new to Madden, I've just never heard these terms before.........

Sim is someone who play simulation football, someone who tries to copy exactly what happens out on the field on Sundays. Cheese is someone who plays to win all out, anything to win most of the time these things they do to win are the exact opposite of simulation football. Like filling the gaps on the DL with LBs and safteys. Or passing to your fast RB every play in the flats. Easy ways to get big yardage, but it never happens on Sunday out on the field.

Those cheese ballers can be shut down easily once you figure out their tendicies, once you figure them out you own them. It does suck playing those types though.
