Random Franchise Question

I have never played franchise before in all my years of playing Madden. Lately I have only played online, but I decided to check out some of the new features of the game. I just started a franchise and I have a question. Is there any reason why my playbook only says run, pass and deep pass. Is there a way to get the actual playbooks in the franchise? Thanks in advance.

Edit: One more question...what is the Easy Play feature that I see on the select sides screen?

I believe your inf act getting that playbook because easyplay is on, hit in the right thumbstick at controller select. That should turn easy play off, at least last year it did.
