This would add an extra dimension of realism to us dynasty junkies. Wouldn't be hard to implement IMO. This way you could over sign players past the allotted 25 without having to cut players. Any over the allotted 25 could either get a redshirt or greyshirt as in real life. All greyshirts would count toward next years class number.
IMO, this would eliminate the option for cutting players. Although it's not completely out of the realm of possibility, it is however, a rarity for scholarship players to get cut. Furthermore, you never hear about a school cutting scholarship players just to fit a class into the allotted number of scholarships. I just doesn't happen. But in EA's NCAA series, you either find yourself cutting players every year, or as I do, only recruit the numbers I need.
Adding greyshirts fixes this IMO.

So true Doom, at times this year I found myself recruiting all of 3 players, or worse yet scrambling to put an extra db,ot at kicker to keep from loosing them in some random cut by the computer.

what is greyshirting exactly?
i know paul pinegar was greyshirted.

Basically, greyshirting is similar to redshirting with some degree of variance. Here's an ex. of a team greyshirting players:
You have a max of 85 players total that you can have on scholarship at a D1 school. Say you lose 20 players to graduation, early entry to NFL, transfer etc. Now you have 20 available spots to offer scholarships in the offseason. But once you go out and start getting verbals from players you realize that you will end up having around 25 players total that sign with you on NSD. If everyone qualifies, five of those players will have to receive a greyshirt and count toward next year's number, meaning next season you will have five less scholly's to give out.
Only stipulation is that, I think, the NCAA has a rule where greyshirts can't participate in organized team practices until like January of the next year or bowl practices. Something along those lines.
But EA wouldn't have to even dealve into all the specifics of it, just give us the generic option of greyshirting and I'll be more than happy. In my current dynasty, I don't believe in the cutting of scholarship players, so I only sign who I need. This past season, with this philosophy in mind, I only had 8 available scholarships to give...in-season and offseason combined. With a greyshirting option I could have at least oversigned about 5 more or so.

i hate it when you become a powerhouse and you would have to cut fresman in the high 70's or low 80's.

I don't like when that happens either. Sometimes, when I get deep into a dynasty and have great players at every position, I'll keep the fresman in the high 70's or low 80's and cut a high 80s/low90s junior or senior that does not and will not start cuz a younger and better guy is at that position. Thats also about around the time I get bored and start over again.
