How do you proceed to resign coaches?
In the postseason, I got into the coaching staff options to resign the ones with contracts I knew were expiring and...they were gone...and nowhere to be found amongst the available coaches...
Coach Dungie is coming up next season and I'd hate to loose him. :p
Note: I have the PC version if that changes anything.

If they were "gone" it means either: (A) Their contract expired or (B) They retired from your team or the NFL. (You should have gotten a message in the offseason saying your coach has retired because he had too many Super Bowl rings or some corny thing.
Somtimes coaches retire from your team, disappear for a few years, and come back (You would have to rehire them). Some coaches seem to be in "coach limbo", employed in the NFL somwhere but not showing up on any list.
The true workings of the coaching movements in this game are kinda sketchy to me, but I do know that sometimes you just have to bite the bullet and hire someone else. I've been trying to get Bill Cowher back for about 5 seasons and had no luck so far.

The best way to re-sign coaches is to extend their contract when there's one year left on their existing contract.
I've had coaches resign from the league because of too many SB rings, only to have them pop back up in a few years. The resignations that seem permanent are the ones where the coach retires on age related grounds.
Also because there are so many coaches out there I've missed the coach when searching for him, only to end up facing my coach at some point during the next season.

This might sound stupid, but how come you can sign some coaches as an Offensive coach, but some only a headcoach?

I guess the answer would be that they want a head coaching job.
BTW, I am using the default rosters, but why doesn't Greg Williams show up on the defensive coordinator of the Redskins?

If you are looking at the available coaches then alot of the time they are already employed, and the only way you can hire them is if you give them a promotion, so you can get a current OC or DC form another team to be your head coach, but not any of your coordinator positions. You can also hire another teams STC to be your OC/DC or HC as well.
I usually just go looking at the unemployed coaches tab so I don't have to bid against that current team and run up his salary.
