When I go into practice mode I cant change my offensive
packages, why, where can I go change my packages w/out playing a full game?

Thanks~~ I wish I could just work on my offense and not play defense. But I think 2 min drill would be better thanks again~~

You can turn off defense in the two minute drill if you want... they call it something like head to head challenge, and turn that off and you'll only play offense :p
