I play guys who will bring all out blitzes, and I am wondering if picking a slide protection actually helps or if the computer just screws up due to the confusion of all the blitzers.

If it is an 8 man blitz, it should be pretty easy to beat.
If you have a fast RB, audible to a toss and run like the dickens to daylight.
If you have an average RB, then formation shift to singleback big and hot route the TE's for extra blocking. Hot route the rb to block. Then send your fast WR on a fade in route over the middle. He'll be wide open. And with a little luck might even break free for a ton of yards after the catch.
Slide protection in ought to give you plenty of time to get a pass off in this instance.

Yes. I use it all the time and is the main reason i hardly get sacked running bunch formations. the key like every other pass play is to take a step up as soon as u take the hike, so that the blitzers run into your line, then roll a little with how u slid the line. For example, if someone blitzes off of both edges on me, I will slide the line toward the wide side, hot route the RB to block the short side and upon receiving the hike, step up and roll towards the wide side
