The only player I control is usually the dlineman I want to know is it more effective to control the middle linebacker or the safety.

i think it depends on the play that you are calling. For example, you are calling an all out linebacker blitz vs 3 wide. Your safeties are playing cover 2, in this situation, its better for you to take one of your safeties and manually cover the slot receiver. In another example, all out LB blitz again but its vs I normal 2 back set. Your Safeties are playing cover 2 and your corners are matched up in man coverage. You see the flats are open, so you control the OLB and look to see if the RB goes out into the flat before you blitz. If he does then you follow him.

Yep - what we said. FS or SS. Be prepared that your play will degrade until you figure out how to play coverage - it ain't easy.

Actually for me, coverage was the easy part.... I have a problem in run support. I can never seem to avoid blocks from linemen or WR so unless I know exactly where the run is going its hard for me to fill in run support. I know its possible, I play people who are really good with the safety and come up and big hit the ish out of me, but I just havent gotten the hang of it so if anybody has any pointers that would be great...

Oh, with coverage... just practice it. Play in practice or an unranked game with a friend and just have them hose the ball. Deep ball=easy. Just run with the WR, get in position so you're close to the ball and hold the swat button. Your DB will fly up and knock it down. The harder part is intermediate routes... learning to recognize them, how to jump the route and get in the passing lanes and start getting user picks... this leaves the deep ball open so I try to bait the opponent and pick my spots for this type of play...
