Yeah, your best bet is to use a DE and manually cover it.
A middle zone with short coverage will discourage the angle route. There are some in nickel and 3-4, I will look at the playbooks and let you know which ones are effective. I use the angle play on offense all the time, I love it. Against man and man/zone coverage it's tough to stop, as the HB almost always gets a step or two on the LB assigned to him, and the FS is usually too deep to converge to the short middle. But a short drop zone will put defensive players in the area the HB will be running to. This should get you some tipped balls and maybe even a pick now and then.
