Questions regarding PS3 Madden im lost with.

I have a few questions regarding the PS3 madden 07.

1) Remember in the PS2/xbox madden, you could go to the Roster and change the players attributes or position or even his hair/jersey number? You can't do this in madden 07 for PS3 huh?

2) How do you delete a player you create? I can't find it.

3) How do you hide your plays when you are playing against a friend so he/she doesn't see your plays you pick?

4) How do you make a S double cover someone or have a LB in spy? You can't change these like previous Systems?
