In a nut shell, as with most games like this, all the teams are based on a tier system. Knowing the tiers only comes from playing and learning the game.
If you really want to match up with someone, try this:
Go to the roster management section before you go online. Go to depth chart and auto reorder every team. You'll notice huge spikes in some teams like FSU and I think TAMU (they go to an A- I beleive). Now, some of that spike is caused by moving players around in special teams, but most of the time it's also due to some players not playing when they're rated better.
Matching up isn't always the best thing to do though. Play to your stregths. If it's running the ball, you'll want an IP RB, if it's the option, you'll want a fast QB, if it's the passing game, you'll want a QB with good ACC and possibly an IP WR, if you struggle on defense, you'll want a team with a solid defense (Cal, GT, and VT come to mind here).
As Heavy said though, matching up really doesn't mean a thing if the guy is flat out better than you. I've routinely beaten WVU, Michigan, and GT with SMU.
For top tier B teams, check out Oklahoma State, Washington, Iowa State, and Ole Miss to name a few.
